Harvesting

We have handpicked thousands of green vanilla beans over the last few days.
Choosing which beans to harvest and which to leave to ripen is an art our pickers have mastered for more than 30 years.
Timing the harvest just as the pods turn from dark to light green and develop a yellowish tinge at the apex, indicates perfect ripeness, ensuring the highest vanillin content and the finest flavour.
